Step 1: Dough Making

Mix Plain flour, semolina, salt, and then add clarified butter and mix well. Then knead a soft dough using little water at a time and cover it and give it a rest for 10 minutes. Then make 20 small size balls and roll them as medium-sized chapatis.

Step 2: Rice Flour Paste

Mix ghee in the rice flour paste and make a smooth creamy paste.

Step 3: Assembling the Chiroti

Take 4-5 rolled chapatis prepared in step 1. Spread the creamy rice paste on each chapati and assemble them by keeping them on top one by one to make 5 layers. Then roll them in a cylindrical shape and cut them into 3-4 pieces.

Then roll each portion like a small size poori.

Step 4: Final Frying and Garnishing

Deep fry the rolled chiroti till they are golden brown. Once they are warm, sprinkle the sugar on top and store it in an air-tight jar to enjoy with your evening tea and coffee or just as a munching snack.
